Oat Milk Pulp Vanilla Cookies with Olive and Coconut Oils
So, yes, this post has a very long title.
Last week I made some really delicious cookies with the leftover pulp from some homemade oat milk. Also, at the time, I was low on butter so I substituted in olive and coconut oils. The cookies turned out so well.
To recreate them, here’s what you can do:
Take your favorite vanilla sugar cookie recipe and simply add the oat pulp. Do note that the oat pulp will most likely alter the moisture level of your resulting cookie dough.
(For the oil version) For 1 cup of butter, you can substitute 1 cup of oil. I used 1/2c olive oil and 1/2c coconut oil.
(To heighten your cookies) You can roll them in something special. I used matcha sifted with powdered sugar and cinnamon mixed with granulated sugar.
The pictures above present beautiful cookies to you. However, these were from my fourth baking session! :D My very first batch was the experiment where I tested the idea. The cookies were so good - I used the dough for the rest of the batches. Presentation, on the other hand, was not so good. The cookies were too large and quite dense. Also, without the coating, the bare cookies didn’t look very enticing to me. See below for quick snaps of that initial baking batch and some pre-coating steps.
As you’ll see, I also experimented with chocolate chips as a coating. The result from that test was delicious as well. Storage, however, was an issue as I found it difficult to store the chip-covered cookies in a way that didn’t smudge chocolate on the other cookies or on the storage container itself.

The final pre-bake process is detailed below:
Take the cookie dough and form it into a log (roughly 3 inches in diameter).
Cut the log into 1/4 inch sections and then cut each section in 3 equal pieces. This should get you to a nice bite-sized cookie.
Form each piece of dough into a ball and gently press to form a dough disc.
Either bake as-is or tap the disc into the toppings of your choice.
Bake according to your recipe - taking note that the oat pulp does add some extra moisture to the dough - and enjoy!
